Fresh sourdough bread

All our Bread is Sourdough, meaning it is naturally leavened made with just Flour, Salt and Water. We prioritise using Irish organic stone-ground flours and whole grains, which retain vital nutrients and fibre often lost in the production of white flours. By embracing whole grains we are producing a more nutritious product and a more sustainable system with less waste. We like to push the 'sour' flavour in our breads building up a savoury umami taste profile.

Some sweet things

As we use Irish stone-ground flour in our sweet things, we like to let this flour speak for itself. The ancient and heritage varieties of flour have a natural depth of flavour, with complex sweetness and nutty, earthy flavours.

Our pastries undergo a 48 hour fermentation process and are made with a Poolish and a Levain starter and Irish butter giving them a unique fermented flavour profile. We pioneered the use of salted Irish butter in our pastries where traditionally unsalted butter is used. We use local seasonal fruits and local free range eggs, organic spices and nuts and some raw cane sugar across our whole range of pastries.

Coffee please

Our coffee is roasted and supplied by Roasted Brown in Wicklow. They roast the best grade seasonal single origin coffee beans to bring out the natural sweetness of the bean highlighting its natural sweet floral and fruity notes. Roasted Brown work closely with coffee growers and importers focusing on sourcing the finest seasonal green coffees. They prioritise sustainable sourcing, and work with farmers and co-ops who are fully engaged with the coffee beans they grow. They highlight the natural and unique characteristics of each coffee's origin.

Natural wine

Our natural and organic wine selection is sourced from organic and biodynamic vineyards that share our commitment to sustainability. Natural wines are unfiltered, with none or very little sulphites added. The winemakers use ancient winemaking techniques that mirror ancient bread making practices like sourdough baking.

We do lunches

Join us for a wholesome lunch featuring seasonal, locally sourced ingredients. Our menu includes hearty sandwiches on freshly baked sourdough that celebrate the bounty of our local producers.

Provisions

Beyond bread and pastries, we produce other products such as Irish flour fresh pasta, Irish flour sourdough crackers, our own granola and kombucha - Rose & Hibiscus and Lemon Verbena. We also sell in our retail fridge and shelves a range of delicious handmade foods made by small independent Irish producers such as: Corleggy cheeses, Gubbeen - charcuterie, cheeses, bacon, hot smoked ham, My Goodness ferments, Organic free range eggs, Leitrim Hill cheese, Irish Craft Soda, Garrai Mara organic veg, Real olive company - hummus, pesto, olives, cheeses, oils, balsamics, Local jams and marmalades, local honey, Harrys Nut Butter and Roasted brown and Stone Valley retail coffee beans. And some producers from futher afield such as Honest Toil organic ethical EV olive oil and Crazy Bastard hot sauces.
